Pumpkin Muffins

4 eggs, slightly beaten
2 Cups white sugar (or less)
1 1/2 Cups cooking oil
1 3/4 Cups pumpkin
3 Cups flour
1 T. cinnamon
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 Cups raisins (optional)
brown sugar

1. Blend eggs, sugar, oil and pumpkin and beat thoroughly. Add all dry ingredients except brown sugar, and mix until smooth. Stir in raisins.

2. Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar. Bake at 375 degrees for 15-20 min. Makes 2 dozen muffins.
